One of my favorite fall treats is roasted pumpkin seeds. They are the perfect homemade snack! Every year I get a big pumpkin to carve. You can actually see what we carved this year on CAcafe's brand new "CAcafe Craft Corner" show on Youtube here! I always save all the seeds so I can roast them. There are so many ways to roast pumpkin seeds, but one of my favorite ways to make them is with CAcafe coconut coffee.

For this recipe you will need:

  • 1 ½ cup of seeds (about one large pumpkin’s worth)

  • 2 tbsp. melted coconut oil (can substitute melted butter or olive oil)

  • 3-4 heaping spoonfuls of CAcafe Coconut Coffee

  • ½ tsp. salt

DIRECTIONS:

1) If you got your seeds from a pumpkin, then you will need to clean them. You can put them into a strainer and run cool water over them. Make sure to get all the slimy pumpkin guts and chunks out of the seeds.

2) After washing the seeds, spread them out on parchment or foil to dry (do not use paper towels or the seeds will get stuck to the paper!)

3) Preheat the oven to 300 degrees F

4) Once seeds are dry (takes about 30 minutes), transfer them to a bowl, pour in the coconut oil, salt, and CAcafe Coconut Coffee powder, and stir until all the seeds are evenly coated.

5) Pour the seeds out onto a greased baking sheet so that the seeds are in a single layer (you don’t want clumps or groups of seeds because they will not all be roasted if that happens)

6) Put the seeds in the oven for 20 minutes. After the 20 minutes, take the seeds out and stir them using a spatula. Put them back in the oven for another 20 minutes.

7) Allow your seeds to cool and enjoy!
