One of my favorite fall treats is roasted pumpkin seeds. They are the perfect homemade snack! Every year I get a big pumpkin to carve. You can actually see what we carved this year on CAcafe's brand new "CAcafe Craft Corner" show on Youtube here! I always save all the seeds so I can roast them. There are so many ways to roast pumpkin seeds, but one of my favorite ways to make them is with CAcafe coconut coffee.
For this recipe you will need:
1 ½ cup of seeds (about one large pumpkin’s worth)
2 tbsp. melted coconut oil (can substitute melted butter or olive oil)
3-4 heaping spoonfuls of CAcafe Coconut Coffee
½ tsp. salt
